Paleo Chunky Monkey Muffins

I had a heck of a time making these. First, my bananas weren't ripe enough. Then I forgot to buy coconut sugar. Then I didn't have enough butter. Then I didn't have enough eggs. In other words, I need to learn how to read a recipe before going to the grocery store!

Paleo Stuffed Bell Peppers


My sister had surgery, so I told my brother-in-law I would make him some food while Jenn was recuperating. This is what he asked for. This picture shows 8 stuffed bell peppers, but somehow only 6 stuffed bell peppers actually made it to their house ;)

However, this time I cut my finger with the vegetable chopper when I was trying to wash it off, so I have a cooking injury. :(

I did another competition. I must be crazy. This one was called "No Baby, Leave your Socks On" and all of the competitors were supposed to wear crazy knee socks. I wore my "Bad @$$" socks :) 

WOD 1: Thruster/Box jump Ladder (7min AMRAP)
45#(scaled)
20″ box jump/step up(scaled)
2,2-4,4-6,6-8,8-10,10……

WOD 2: (10 min AMRAP)
10 pull ups/ jumping pull ups(scaled)
20 burpees
90 single unders (scaled)
40 wallball 14/ 10(scaled)
50 kb swing 26#(scaled)
then max reps clean & jerk in remaining time 95#/65#(scaled)

WOD 3: Deadlift ladder
15 bars 65#-205# (scaled)

My first olympic lifting meet

We had an in-house olympic lifting meet to learn how to lift in a competition environment. It was really fun cheering for the other athletes in my box that I work out next to every day. I stayed all the way until the end to watch the guys lift as heavy as they could. It was amazing. 
I did about what I thought I would. Here are the scores.

I took a week off from Paleo and look what happened...

I thought that taking a week off between Paleo challenges would be a good idea so that I could get any food cravings out of my system. Definitely not a good idea. You know that phrase "all things in moderation"... um... yeah. I learned that one the hard way. It's funny how something I should already know I can totally forget overnight.

Also, I took the week off of CrossFit to rest my back. So eating like crap + not working out = getting fat again. :( 

I kind of went crazy last week. 
  • Lone Star Burger from Red Robin (yumm!)
  • Pasta from Buca di Bepo
  • Pizza from Dominos x2
  • Vietnamese food from Tai Kee
  • Tex Mex from Molinas
  • Chili-Cheese Burger from Tookies
  • Breakfast Taquito and hash browns from Whataburger
  • Bahama Bucks
  • Sno-Cone Express




Banana Colada/Jamaican Punch with Cream Sno-Cone

One or two of those would have been okay, but I had TEN cheat meals in one week. That is double what I had the previous six weeks. My stomach was upset and my face broke out. NEVER AGAIN!

Go watch "Hungry for Change" on Netflix. Then you'll see why I was doing this in the first place.

Before/After six-weeks Paleo Nutrition Challenge

Before/After

MY Weight Goal:
Lose 5 pounds - in the end I only lost 1 pound, but look how toned I got! Yeah baby! I know I lost fat and replaced it with muscle.

My Fitness Goals:
1) 8 65# unbroken thrusters - didn't meet it, so it's still a goal.
2) 195# deadlift - met it and got a 205# deadlift.
3) 100# clean & jerk - met it and got a 105# C&J

Paleo Apple Cinnamon Crumble Muffins


Paleo Apple cinnamon crumble muffins (I can't find the link to the recipe, but here it is from the print-out)

Ingredients:
2 apples peeled and cored (I used granny smith)
1/2 cup coconut flour
1/4 club flax seed
1/2 tsp baking powder
1/4 tsp salt
1 tbsp cinnamon
4 eggs
1/4 cup honey
1/4 cup coconut oil
1/4 cup coconut milk
1 tsp vanilla

Instructions:
1. Preheat oven to 350
2. Chop apples into chunks
3. Mix all dry ingredients and set aside
4. Mix wet ingredients
5. Slowly mix dry ingredients with wet ingredients
6. Carefully fold apples into batter
7. Bake for 25 minutes (or until done)

Apple/Bacon Stuffed Pork Chops


OMG. These were AMAZING!!!! I should quit my job and become a chef (they were that good!). Seriously, I think this is the best meal I have ever made (and it's paleo!)

I made this spaghetti with zucchini noodles instead of regular pasta so that it was paleo friendly.

Paleo Coconut/Pecan Cookies




Maren gave me this recipe from her blog:

Coconut Pecan Cookies

Ingredients
  • 2 eggs + 1 egg yolk
  • 1/2 cup honey
  • 1/2 cup melted coconut oil
  • 1 1/2 tsp vanilla
  • 1 tsp sea salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 1/2 cups blanched almond flour
  • 1 cup finely shredded coconut
  • 1 cup finely chopped pecans
Instructions
  1. Preheat oven to 375 degrees
  2. Combine all wet ingredients in a large bowl and mix well
  3. Add salt, baking soda, and baking powder and continue mixing
  4. Slowly add in almond flour and mix until well incorporated
  5. Finally, mix in shredded coconut and chopped pecans
  6. Roll dough into 1 - 2 inch balls and place on cookie sheet (if dough becomes too sticky to roll, place in refrigerator for a little)
  7. Bake for 12 minutes or until the tops turn golden

Mini Quiche


Mini quiches ready for the work week (and they're paleo)

I had to adapt the recipe, so here is what I came up with:
10 eggs
8 slices of bacon (cooked then chopped)
handful of spinach (chopped)
1 red pepper (chopped)
1 yellow pepper (chopped)
1 small white onion (chopped)

1) cook the bacon, chop, and set aside
2) chop the peppers, onion, and spinach and set aside with bacon
3) whip the eggs then pour in with the bacon/peppers/onion
4) pour in greased muffin tins and bake at 350 for 20 min (or until done)

I think they taste more like mini omelettes, so I'm going to eat the rest with fresh salsa

Magnolia Beginners Competition










I came in 19th out of 22 during my first CrossFit competition this morning.

Lessons learned from my first competition:

1) Just because the name of the competition says "beginners" doesn't mean that the competitors are beginner athletes (like me)- just new to CrossFit. Some of the girls I was up against were incredible athletes, and I didn't stand a chance (for now)
2) If your back is already hurting before the competition (as in taking Aleve, icing it, and desperately calling the chiropractor hurting before the competition) then still competing isn't the brightest idea in the world. However, the Airrosti guy fixed me up, and I stayed in and I did the best I could. Now that it's over, I'm icing down and will be taking it easy for a few days.
3) Competing is FUN  I really haven't had anything to compete in since high school, and I've never been athletic, so this tapping into the competitive side of me-which I love
